Cutting the beef

Marinating the beef

  1. In a large bowl, add brown sugar, starch syrup, and minced garlic to the beef.
  2. Evenly mix the ingredients and marinate for 10-20 minutes.
  3. Tip: Start with adding the sugar first to allow the sweetness to penetrate the meat.

Preparing the vegetables

  1. Remove the stem of the shiitake mushrooms and thinly slice them (0.3cm thickness).
  2. Slice the green onion and red chili pepper diagonally (0.5cm thick).
  3. Trim the tip of the onion and slice it (0.5cm thickness).

Cooking the beef bulgogi

  1. Add thick soy sauce to the marinated beef and mix gently to avoid breaking the meat.
  2. Add the onion, green onion, red chili pepper, and shiitake mushrooms to the beef. Mix well.
  3. Add black pepper and sesame oil on top of the vegetables and mix again.
  4. Tip: If cooking the next day, add only the green onion and store the dish in the fridge. Add the other vegetables on the day of cooking.
  5. Pre-heat a pan on high heat and cook the beef bulgogi.
  6. Stir gently with tongs or chopsticks to untangle the meat.
  7. Tip: If desired, add 1/4 tbsp of MSG for additional flavor.
  8. Once the beef bulgogi is completely cooked, place it on a plate and garnish with sesame seeds.

Adding MSG

  • If desired, you can add 1/4 tbsp of MSG to enhance the flavor of the beef bulgogi.

Storing the marinated beef

  • If you plan on cooking the beef bulgogi the next day, add only the green onion and store the dish in the fridge. Add the other vegetables on the day of cooking.

Using a portable stove

  • To ensure even cooking, it is recommended to use a portable stove and a low-sided pan. This way, the dish will not evaporate too much and you can easily cook in front of your guests.

Adjusting the seasoning

  • Feel free to adjust the amount of soy sauce based on your preference. If you prefer a less salty taste, reduce the amount of soy sauce. Just remember that the vegetables can become slightly bland if you omit them, so compensate by adding more soy sauce for flavor.

Crispy beef bulgogi sandwich

  • Instead of serving the beef bulgogi with veggies, you can make a delicious crispy beef bulgogi sandwich. Cook the beef until it becomes crispy and then sandwich it between bread slices. You can also add some mayonnaise or ketchup for extra flavor.
